Bright, sauteed vegetables paired with nutritious little millet, bright greens, colorful capsicums, zucchini, melon seeds and many more makes for a bowl of pure, gluten-free, plant-based energy.
1 cup cooked little millet
1 small red onion
1/2 large yellow capsicum (bell pepper)
1/4 apple
1/4 boiled sweet potato
Some spinach
Boiled chickpeas and black chana
2 tbsp extra virgin olive oil
Small pinch chili flakes (optional)
Black pepper & rock salt as per taste
Process:
Boil soaked little millet. The ratio of little millet to water is 1:1.5
Thinly slice onions, chop capsicum, zucchini, apple, and boiled sweet potato into cubes
Heat 2 tablespoons of oil over medium heat.
Add chopped veggies. Saute them. Add the boiled chickpeas and black chana. Add the chili flakes
Once millet and vegetables are cooked combine in a large bowl and gently toss with peppers and salt. Garnish with freshly chopped basil, if available.
Serve warm
